- In a medium bowl, whisk together 1 ¾ cups of all-purpose flour, 1 teaspoon of ground cinnamon, 1 teaspoon of baking powder, and ¼ teaspoon of salt.

- Dissolve 2 teaspoons of instant coffee granules in 1 teaspoon of vanilla extract, stirring until fully blended.

- In a large bowl, beat ½ cup of melted unsalted butter with 1 cup of brown sugar until smooth and creamy.

- Gradually add your dry ingredients into the wet mixture, stirring until just combined.

- Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.

- Once chilled, preheat your oven to 350°F (175°C). Scoop tablespoon-sized amounts of dough and roll them into balls.

- Arrange the coated dough balls on a baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes.
