Ingredients

  • 2 cups fresh cherries pitted and halved
  • 1 cup whole milk
  • 3 large eggs
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1 tablespoon unsalted butter melted
  • Powdered sugar for dusting optional

Method

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round baking dish or pie dish with butter.
  2. Arrange the pitted cherries evenly in the bottom of the prepared baking dish.
  3. In a mixing bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, almond extract, and salt until well combined.
  4. Gradually add the flour to the mixture, whisking until smooth and free of lumps.
  5. Pour the batter over the cherries in the baking dish.
  6. Drizzle the melted butter over the top of the batter.
  7. Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed and golden brown. A toothpick inserted in the center should come out clean.
  8. Allow to cool slightly before dusting with powdered sugar, if desired. Serve warm or at room temperature.
