For the Cheesy Mashed Potatoes

Method
 

Cooking Instructions
  1. Season the Chicken by generously sprinkling salt and black pepper over 1.5 pounds of chicken thighs or breasts. Allow to rest.
  2. Sear the Chicken in a large skillet with 1 tablespoon of butter over medium-high heat for 4-5 minutes on each side until golden brown. Set aside.
  3. Sauté the Onions by adding the remaining tablespoon of butter to the skillet and then adding 1 finely chopped medium yellow onion, cooking for about 5 minutes.
  4. Add the Garlic, stirring in 6 cloves of minced garlic and cooking for 1 minute.
  5. Make the Roux by sprinkling 2 tablespoons of all-purpose flour and stirring for 2 minutes.
  6. Whisk in the Chicken Broth gradually, bringing the mixture to a simmer for about 5 minutes.
  7. Simmer the Chicken by returning the seared chicken to the skillet, covering, and reducing heat to low for 15-20 minutes.
  8. Prepare the Mashed Potatoes by boiling 2 pounds of peeled and cubed potatoes until fork-tender, about 15 minutes.
  9. Mash with Cheese by mixing cooked potatoes with 0.5 cup of warmed milk and 1 cup of shredded cheddar cheese until smooth.
  10. Serve and Garnish by plating mashed potatoes with chicken and gravy, topped with optional parsley.
