Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish by lining it with parchment paper or greasing it.
  2. In a large mixing bowl, combine the cottage cheese, eggs, maple syrup or honey, and vanilla extract. Whisk until smooth.
  3. Add almond flour, baking powder, cinnamon, salt, and grated carrots. Stir until well blended, and fold in nuts if using.
  4. Pour the batter into the baking dish and smooth the top. Bake for 25-30 minutes until golden brown and a toothpick comes out mostly clean.
  5. Let the bars cool in the pan for at least 10 minutes before slicing and serving.
