- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup or honey (if using), and vanilla extract until smooth and creamy.
- Add almond flour, baking powder, cinnamon, a pinch of salt, and grated carrots. Stir until well combined.
- If using, fold in any chopped walnuts or pecans.
- Pour the batter into the lined baking dish and bake for 25-30 minutes until the top is golden and set.
- Let cool in the pan for 10 minutes, then lift out using parchment and cool on a wire rack.
