Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease each cup of a muffin tin or silicone mold.
  3. In a large mixing bowl, crack the eggs and whisk them until well combined and slightly frothy.
  4. Add the cottage cheese, shredded cheese, salt, black pepper, and garlic powder to the egg mixture and stir gently.
  5. Fold in any optional mix-ins like spinach, bell peppers, or chives.
  6. Spoon the mixture into each muffin cup, filling them about three-quarters full.
  7. Bake for 18 to 22 minutes, or until golden on top and set in the center.
  8. Remove from the oven, let cool for 5 minutes, then gently remove from the tin.
