Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and season with salt, pepper, paprika, and dried thyme. Cook for 5-7 minutes until browned.
  3. Stir in diced onion and bell pepper, cooking for another 5 minutes until tender.
  4. Add spinach or kale and stir until wilted, about 2-3 minutes.
  5. Combine the turkey-veggie mixture with cubed sweet potatoes in a large mixing bowl.
