  • 2 cups All-purpose flour Gluten-free blend can be used.
  • 1 cup Brown sugar
  • 1/2 cup Granulated sugar
  • 1 tbsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup Apple cider Fresh, unfiltered is best.
  • 2 large Eggs
  • 1/2 cup Unsalted butter Melted and cooled.
  • 1 cup Diced apples
For the Streusel Topping
  • 1/2 cup All-purpose flour
  • 1/4 cup Brown sugar
  • 1 tsp Ground cinnamon
  • 1/4 cup Unsalted butter Cold, cut into pieces.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together all dry ingredients.
  3. In another bowl, mix the wet ingredients until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. For the streusel topping, mix dry ingredients then cut in the cold butter until crumbly.
  6. Fold in diced apples and fill the muffin cups about two-thirds full with batter.
  7. Sprinkle streusel topping over each muffin cup and bake for 18-22 minutes.
  8. Cool in the tin for 5-10 minutes before transferring to a wire rack.
