Stuffing Preparation
- In a large mixing bowl, combine the crab meat, chopped shrimp, softened cream cheese, gluten-free breadcrumbs, freshly chopped parsley, lemon juice, garlic powder, salt, and pepper. Mix until cohesive.
- Take the salmon fillets and place them skin-side down on a cutting board. Slice horizontally into each fillet to create a pocket.
- Spoon the crab and shrimp mixture into each salmon pocket, pressing down gently to pack it in.
- Preheat oven to 375°F (190°C) and grease a baking dish. Place each stuffed salmon fillet in the dish and bake for 20-25 minutes.
- Remove from oven and let it rest for about 5 minutes before serving.
