  • 4 fillets Salmon skin-side down
  • to taste Salt
  • to taste Pepper
For the Stuffing
  • 1 cup Crab Meat opt for fresh for the best taste
  • 1 cup Chopped Shrimp frozen or fresh works
  • 8 oz Cream Cheese softened, vegan options available
  • 1 cup Gluten-Free Breadcrumbs
  • 1/4 cup Fresh Parsley can substitute for dill or thyme
  • 2 tbsp Lemon Juice lime juice is a zesty alternative
  • 1 tsp Garlic Powder or fresh minced garlic

Method
 

Stuffing Preparation
  1. In a large mixing bowl, combine the crab meat, chopped shrimp, softened cream cheese, gluten-free breadcrumbs, freshly chopped parsley, lemon juice, garlic powder, salt, and pepper. Mix until cohesive.
  2. Take the salmon fillets and place them skin-side down on a cutting board. Slice horizontally into each fillet to create a pocket.
  3. Spoon the crab and shrimp mixture into each salmon pocket, pressing down gently to pack it in.
  4. Preheat oven to 375°F (190°C) and grease a baking dish. Place each stuffed salmon fillet in the dish and bake for 20-25 minutes.
  5. Remove from oven and let it rest for about 5 minutes before serving.
