- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Scrub and pierce the sweet potatoes. Rub with olive oil and lightly sprinkle with salt.
- Roast the sweet potatoes on the baking sheet for 40-45 minutes until soft.
- While cooling, heat butter in a skillet, add diced apples, and cook for 3-4 minutes until caramelized.
- Stir in cranberries, brown sugar, cinnamon, and nutmeg; cook for 5-7 minutes until cranberries pop.
- Slice the cooled sweet potatoes in half and fluff the insides with a fork.
- Spoon the apple-cranberry mixture into each sweet potato half and return to the oven for 10 minutes.
- Remove from the oven, rest for a few minutes, then garnish before serving.
