Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Scrub and pierce the sweet potatoes. Rub with olive oil and lightly sprinkle with salt.
  2. Roast the sweet potatoes on the baking sheet for 40-45 minutes until soft.
  3. While cooling, heat butter in a skillet, add diced apples, and cook for 3-4 minutes until caramelized.
  4. Stir in cranberries, brown sugar, cinnamon, and nutmeg; cook for 5-7 minutes until cranberries pop.
  5. Slice the cooled sweet potatoes in half and fluff the insides with a fork.
  6. Spoon the apple-cranberry mixture into each sweet potato half and return to the oven for 10 minutes.
  7. Remove from the oven, rest for a few minutes, then garnish before serving.
