Apricot Ice Cream Instructions
- Halve and chop the apricots, blend with lemon juice until smooth to create apricot puree.
- Combine heavy cream, whole milk, and sugar in a bowl and mix until sugar dissolves.
- Mix the apricot puree into the cream mixture until fully incorporated.
- Cover and refrigerate the mixture for at least 2 hours to chill.
- Churn the cold mixture in an ice cream maker according to instructions, about 20-25 minutes.
- Fold in any reserved chopped apricots, then churn for another 1-2 minutes.
- Transfer to a freezer-safe container and freeze for at least 2-4 hours before serving.
