Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound total)
  • 4 slices of bacon
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach chopped
  • 1/2 cup grated Parmesan cheese

Method
 

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the pan. Once cooled, crumble the bacon into pieces.
  2. In the same skillet, add olive oil and heat over medium-high. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and sauté for about 3 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, Italian seasoning, and Parmesan cheese. Let the sauce simmer for about 5 minutes until slightly thickened.
  5. Add the chopped spinach and crumbled bacon back into the skillet. Return the chicken to the skillet, spooning some sauce over the top. Cook for another 2-3 minutes until everything is heated through.
  6. Serve the creamy bacon chicken over pasta, rice, or with a side of vegetables.
