  • 1 teaspoon onion powder
  • 1 teaspoon paprika or smoked paprika
  • 1 tablespoon Italian seasoning
  • 1/2 cup Parmesan cheese or nutritional yeast for vegan
  • 1 cup mozzarella cheese low-fat option available
For the Veggies and Seasoning
  • 1/2 cup sun-dried tomatoes oil-packed recommended
  • 4 cups fresh spinach or kale/arugula
  • to taste kosher salt
  • to taste black pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C).
  2. Slice the chicken breasts horizontally into thinner fillets and season with salt and pepper.
  3. Combine cream cheese and heavy cream in a mixing bowl until smooth, then stir in garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan, and half of mozzarella.
  4. Pour the creamy sauce over the chicken in the baking dish, drizzle with sun-dried tomato oil, and sprinkle sun-dried tomatoes on top.
  5. Cover with foil and bake for 20 minutes, until chicken reaches 165°F (74°C).
  6. Remove foil, fold in spinach, and top with remaining mozzarella.
  7. Bake uncovered for an additional 10 minutes until cheese is melted and spinach is wilted.
  8. Allow to cool for a few minutes before serving to enhance flavors.
