- Slice the chicken breasts horizontally into thinner fillets and season with salt and pepper.
- Combine cream cheese and heavy cream in a mixing bowl until smooth, then stir in garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan, and half of mozzarella.
- Pour the creamy sauce over the chicken in the baking dish, drizzle with sun-dried tomato oil, and sprinkle sun-dried tomatoes on top.
- Cover with foil and bake for 20 minutes, until chicken reaches 165°F (74°C).
- Remove foil, fold in spinach, and top with remaining mozzarella.
