- Preheat your oven to 350°F (175°C).
- Cook manicotti shells in boiling salted water until al dente (7-9 minutes). Drain and cool.
- Sauté diced cooked chicken in a skillet over medium heat, season with salt and pepper (5-7 minutes).
- Mix sautéed chicken, ricotta, parmesan, salt and pepper until creamy.
- Fill each manicotti shell with the chicken and cheese mixture.
- In a saucepan, melt butter, add garlic, then cream and parmesan to make Alfredo sauce.
- Spread some Alfredo sauce in a baking dish, layer filled manicotti shells, and top with more sauce.
- Cover with foil and bake for 30 minutes, uncover and bake for an additional 10-15 minutes.
- Let sit for a few minutes, garnish with parsley, and serve.
