  • 4 cups Chicken Broth or Stock Homemade offers the best flavor
For the Creaminess
  • 1 cup Heavy Whipping Cream Can omit or swap for coconut milk

Method
 

Step-by-Step Instructions for Chicken Stew
  1. Brown the chicken by heating 1 tablespoon of olive oil in a pot over medium-high heat, add chicken thighs, cook for 5-7 minutes until golden brown, then set aside.
  2. In the same pot, add remaining olive oil, heat to medium, add onion, carrots, and celery, sauté for about 3 minutes until softened.
  3. Stir in flour, rosemary, thyme, and sage, cook for about 2 minutes until combined, season with salt and pepper.
  4. Add potatoes, sweet potatoes, red bell pepper, and browned chicken, then deglaze with white wine, pour in chicken broth, bring to boil, then simmer for 30 minutes.
  5. After 30 minutes, stir in green beans or peas and heavy cream, simmer uncovered for an additional 10 minutes.
