Cooking Steps
  1. Begin by heating the olive oil in a large skillet over medium heat for about 1-2 minutes.
  2. Add the chopped onion to the skillet and sauté for about 5 minutes until soft and translucent.
  3. Introduce the minced garlic and sauté for an additional minute, stirring continuously.
  4. Add the shrimp and cook for 2-3 minutes on each side until pink and firm.
  5. Pour in the coconut milk, scraping up brown bits, and stir in the fish sauce, soy sauce, brown sugar, and red pepper flakes. Simmer for 5 minutes.
  6. Return the cooked shrimp to the skillet, stirring gently to coat. Cook for an additional 2-3 minutes.
  7. Season with salt and pepper, and squeeze lime juice over the dish.
  8. Garnish with fresh cilantro and serve over cooked rice.
