Step‑by‑Step Instructions
- Cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup pasta water, then drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Season salmon with salt and pepper, then sear skin-side down for about 4 minutes. Flip and cook another 3-4 minutes until fully cooked.
- In the same skillet, reduce heat and sauté garlic for about 1 minute. Add heavy cream, simmer for 2-3 minutes, then stir in Parmesan until melted.
- Add fresh spinach, stirring until wilted, about 1-2 minutes. Season with salt, black pepper, and crushed red pepper flakes. Stir in lemon zest and juice.
- Add cooked pasta to the skillet, tossing to coat in the sauce. Use reserved pasta water to adjust the sauce consistency.
- Flake salmon into large chunks and fold into pasta and sauce, ensuring even distribution.
- Serve garnished with parsley and optionally with extra Parmesan and lemon wedges.
