Method
 

Step‑by‑Step Instructions
  1. Cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup pasta water, then drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season salmon with salt and pepper, then sear skin-side down for about 4 minutes. Flip and cook another 3-4 minutes until fully cooked.
  3. In the same skillet, reduce heat and sauté garlic for about 1 minute. Add heavy cream, simmer for 2-3 minutes, then stir in Parmesan until melted.
  4. Add fresh spinach, stirring until wilted, about 1-2 minutes. Season with salt, black pepper, and crushed red pepper flakes. Stir in lemon zest and juice.
  5. Add cooked pasta to the skillet, tossing to coat in the sauce. Use reserved pasta water to adjust the sauce consistency.
  6. Flake salmon into large chunks and fold into pasta and sauce, ensuring even distribution.
  7. Serve garnished with parsley and optionally with extra Parmesan and lemon wedges.
