For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika omit for milder flavor
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon olive oil or butter
For the Rice
  • 1 cup long-grain white rice or jasmine/basmati
  • 2 cups chicken broth or low-sodium broth
For the Creamy Sauce
  • 2 tablespoons unsalted butter or olive oil
  • 2 tablespoons all-purpose flour or cornstarch
  • 1 cup whole milk or half-and-half/plant-based milk
  • 1 teaspoon thyme dried or fresh
  • 1 cup cheddar cheese shredded
  • 1/4 cup parmesan cheese grated
  • 1/4 cup fresh parsley chopped, for garnish

Method
 

Cooking Instructions
  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper. Heat olive oil in a skillet over medium-high heat and sear chicken for 4-5 minutes on each side until golden brown. Transfer to a plate.
  2. In a medium saucepan, bring chicken broth and a pinch of salt to a boil. Add rice, stir gently, and reduce heat to low. Cover and let simmer for 15-18 minutes until rice is tender.
  3. In the same skillet, reduce heat to medium and melt butter. Whisk in flour for 1-2 minutes until bubbling. Gradually add milk and broth, whisking until smooth and thickened.
  4. Stir in thyme, cheddar, and parmesan into the sauce. Return the chicken to the skillet, cover with sauce, and cook on low for another 10 minutes.
  5. Serve rice on plates, top with chicken and drizzle with sauce. Garnish with parsley.
