- Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- In a large skillet, heat 2 tablespoons of olive oil. Add chicken and sear for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
- In a medium saucepan, combine chicken broth and a pinch of salt. Bring to a boil, then stir in rice, reduce heat, cover, and simmer for 15-18 minutes.
- In the same skillet, melt butter over medium heat. Whisk in flour and cook until golden. Gradually add milk and chicken broth, whisking continuously.
- Stir in garlic powder, thyme, cheddar cheese, and parmesan. Cook until sauce thickens, about 3-4 minutes.
- Return chicken to skillet, spoon sauce over, cover, and simmer for 10 minutes.
- To serve, plate rice and top with chicken and sauce. Garnish with parsley.
