For the Sauce
  • 8 oz Feta Cheese Always use block feta.
  • 4 cups Fresh Spinach Squeeze out excess water if using frozen.
  • 2 cloves Garlic Freshly minced for best flavor.
  • 2 tbsp Olive Oil For sautéing.
  • 1 tbsp Lemon zest Optional.
  • 2 tbsp Lemon juice Optional.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add fresh spinach to the skillet and stir until it wilts, about 2-3 minutes.
  4. Lower the heat and crumble in the feta. Stir in lemon juice and zest.
  5. Gradually add reserved pasta water, stirring to emulsify the sauce until creamy.
  6. Season the sauce with salt and pepper. Toss cooked pasta with the sauce and serve immediately.
