- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add fresh spinach to the skillet and stir until it wilts, about 2-3 minutes.
- Lower the heat and crumble in the feta. Stir in lemon juice and zest.
- Gradually add reserved pasta water, stirring to emulsify the sauce until creamy.
- Season the sauce with salt and pepper. Toss cooked pasta with the sauce and serve immediately.
