Cooking Steps
- Pour about 2 tablespoons of olive oil into a large pot and heat over medium heat for around 2 minutes until shimmering.
- Add diced onion, carrot, and celery. Stir occasionally for about 5 minutes until onions turn translucent.
- Stir in minced garlic, drained cannellini beans, tomato paste, and diced potatoes. Cook for 1 minute while stirring continuously.
- Pour in half a cup of white wine, scraping up bits stuck to the pot, and let it simmer for about 1 minute.
- Add fresh spinach, vegetable broth, salt, and pepper. Stir well and bring to a rolling boil for 3-4 minutes.
- Cover the pot, reduce heat to low, and let it simmer gently for 15 minutes.
- Remove any rosemary sprigs and adjust seasoning as needed before serving hot.
