  1. In a saucepan, combine fresh blueberries, sugar, lemon juice, and lemon thyme. Bring to a gentle boil, then reduce to simmer for about 20 minutes until thickened.
  2. Spread blueberry compote on one side of each slice of bread. Layer shredded white cheddar and mozzarella on half of the slices, then top with remaining slices compote side down.
