  2. Make the Coconut-Curry Batter: Whisk together flour, coconut, curry powder, garlic powder, cayenne, and salt. Mix coconut milk and egg separately, then combine with dry ingredients.
  3. Prepare the Fish: Pat fish fillets dry, season with salt and pepper, and set aside.
  4. Fry the Fish: Heat oil in a skillet. Dip each fish fillet in batter and fry for 3-4 minutes per side until golden brown. Drain on paper towels.
