  • 1 cup breadcrumbs or gluten-free breadcrumbs

Method
 

Instructions
  1. Combine cottage cheese, egg, Parmesan cheese, flour, green onions, herbs, garlic powder, onion powder, baking powder, salt, and pepper in a mixing bowl. Stir until a thick batter forms, about 2-3 minutes.
  2. Scoop about 2 tablespoons of the mixture and shape into small patties, about half an inch thick. Aim for 10-12 patties.
  3. Coat each patty in breadcrumbs, ensuring an even layer covers all sides. Arrange on a plate.
  4. Heat olive oil in a non-stick skillet over medium heat. Add patties in a single layer and fry for about 3-4 minutes per side until golden brown and crispy.
  5. Transfer to a paper towel-lined plate to drain excess oil. Let rest for a few minutes.
  6. Serve warm with Greek yogurt or spicy mayo for dipping, garnished with fresh herbs.
