Instructions
- Combine cottage cheese, egg, Parmesan cheese, flour, green onions, herbs, garlic powder, onion powder, baking powder, salt, and pepper in a mixing bowl. Stir until a thick batter forms, about 2-3 minutes.
- Scoop about 2 tablespoons of the mixture and shape into small patties, about half an inch thick. Aim for 10-12 patties.
- Coat each patty in breadcrumbs, ensuring an even layer covers all sides. Arrange on a plate.
- Heat olive oil in a non-stick skillet over medium heat. Add patties in a single layer and fry for about 3-4 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil. Let rest for a few minutes.
- Serve warm with Greek yogurt or spicy mayo for dipping, garnished with fresh herbs.

Notes
Strain cottage cheese if too moist for the best texture. Chill mixture for easier handling. Use a non-stick pan to prevent sticking during frying. Fry in batches to avoid overcrowding.
