- Preheat your oven to 400°F (200°C).
- Roll out the thawed puff pastry on a lightly floured surface until 1/8 inch thick.
- Place one rectangle of puff pastry on your baking sheet, layer with optional Dijon mustard, ham, and cheese, leaving a small border.
- Top with a second rectangle of puff pastry, press down the edges to seal, and crimp with a fork.
- Beat the egg and brush it over each pastry stack.
- Bake for 20 to 25 minutes until golden brown and puffed.
- Remove from the oven and let cool slightly before cutting into squares or rectangles.
