Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin.
  2. Grate the zucchini and squeeze out excess moisture using a towel.
  3. In a bowl, whisk together flour, baking powder, baking soda, garlic powder, onion powder, black pepper, and salt.
  4. In another bowl, whisk eggs, milk, olive oil, and parsley until combined.
  5. Fold the wet ingredients into the dry ingredients gently until just combined.
  6. Fold in the zucchini, Parmesan, and mozzarella cheese.
  7. Spoon the batter into the muffin tin and sprinkle breadcrumbs on top.
  8. Bake for 20 to 25 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack.
