  • 3-4 pounds beef chuck roast
  • 1 cup pineapple chunks fresh or canned
  • 1/2 cup chipotle sauce
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Method
 

  1. Place the beef chuck roast in the crockpot.
  2. In a bowl, mix together the pineapple chunks, chipotle sauce, chopped onion, minced garlic, beef broth, soy sauce, ground cumin, salt, and pepper.
  3. Pour the mixture over the roast in the crockpot.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the meat is tender.
  5. Once cooked, shred the beef with two forks and mix it with the sauce.
