Step-by-Step Instructions
  1. In a medium-sized bowl, whisk together fresh lime juice, orange juice, olive oil, minced garlic, ground cumin, dried oregano, salt, black pepper, and crushed red pepper flakes if desired.
  2. Place chicken thighs in a resealable plastic bag, pour marinade over, seal tightly, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C) about 20 minutes before cooking.
  4. Remove chicken from marinade, discarding leftover liquid, and place skin-side up on a parchment-lined baking sheet.
  5. Roast chicken in the preheated oven for 35-40 minutes, until skin is golden and an instant-read thermometer reads 165°F (75°C).
  6. Let chicken rest on the baking sheet for 10 minutes before serving.
  7. Sprinkle fresh chopped cilantro over chicken before serving.
