Ingredients
  

  • 8 ounces dried Chinese wheat noodles or spaghetti
  • 2 tablespoons vegetable oil
  • 1 pound ground pork or ground turkey for a lighter option
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame paste or peanut butter
  • 1 tablespoon chili oil adjust to taste
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/4 cup chicken broth or water
  • 2 green onions sliced
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Method
 

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the ground pork and cook until browned, about 5-7 minutes.
  3. Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. In a small bowl, whisk together the soy sauce, sesame paste (or peanut butter), chili oil, rice vinegar, sugar, and chicken broth (or water).
  5. Pour this sauce over the cooked pork in the skillet, stirring to combine. Let it simmer for about 2-3 minutes to thicken slightly.
  6. Add the cooked noodles to the skillet, tossing to coat them evenly with the sauce. Cook for another 1-2 minutes until heated through.
  7. Season with salt and pepper to taste.
  8. Serve the noodles hot, garnished with sliced green onions and chopped cilantro.
