- In a medium mixing bowl, peel and add 2 ripe bananas. Mash them until smooth, with a few small lumps remaining.
- Add 1/4 cup of natural peanut butter, 1 cup of almond milk, 1 tablespoon of maple syrup or honey, 1 teaspoon of vanilla extract, and a sprinkle of ground cinnamon. Stir until well blended.
- Add 1/4 cup of chia seeds to the mixture and stir to ensure they are evenly distributed. Let sit for 5-10 minutes.
- Cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 4 hours, ideally overnight.
- Stir before serving. If too thick, add a splash of almond milk. Spoon into bowls and top with sliced bananas, crushed peanuts, or extra peanut butter.
