  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 tbsp Olive Oil for cooking
For the Flavor Base
  • 1 Onion diced
  • 3 cloves Garlic minced
  • 1 in Fresh Ginger grated
For the Spice Blend
  • 1 tbsp Turmeric
  • 1 tsp Paprika
  • to taste Salt
  • to taste Black Pepper
For the Rice
  • 1.5 cups Jasmine/Basmati Rice rinsed
  • 2 cups Low Sodium Chicken Broth
For Freshness
  • 2 cups Fresh Spinach
  • 2 tbsp Lemon Juice fresh
Optional Topping
  • 1/2 cup Greek Yogurt for garnish

Step-by-Step Instructions
  1. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until lightly browned, about 5-7 minutes.
  2. Add the diced onion, minced garlic, and grated ginger to the skillet. Cook for 3-5 minutes until the onion is softened.
  3. Sprinkle in the turmeric, paprika, salt, and black pepper. Stir well and cook for 1-2 minutes until aromatic.
  4. Mix in the rinsed rice thoroughly with the chicken and spices.
  5. Pour in the chicken broth and bring to a gentle boil, stirring occasionally.
  6. Reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender and liquid is absorbed.
  7. Stir in the fresh spinach and lemon juice. Adjust seasoning as needed.
  8. Spoon into bowls and add Greek yogurt on top if desired. Serve hot.
