Preparation Steps
- Peel and dice 2 medium apples into small cubes. In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced apples, 2 tablespoons of brown sugar, and 1 teaspoon of ground cinnamon. Sauté for 6-8 minutes until the apples are soft and syrupy.
- Lay 2 flour tortillas flat. Spoon half of the apple mixture onto one half of each tortilla. Optionally, add cream cheese or vanilla yogurt on top. Fold the tortillas to enclose the filling.
- Heat a non-stick skillet over medium heat and melt a small pat of butter to coat. Place the folded quesadillas in the skillet, cooking for about 2-3 minutes on each side until golden brown.
- Transfer the cooked quesadillas to a cutting board. Let them cool for a minute before slicing into wedges. Optionally, dust with powdered sugar or drizzle vanilla yogurt on top before serving.

Store leftover quesadillas in an airtight container for up to 2 days. For longer storage, wrap quesadillas and freeze for up to 2 months. Reheat in a skillet for best results.
