Cupcake Preparation
- In a large mixing bowl, whisk together the dry ingredients until well combined.
- In another bowl, whisk together the wet ingredients until smooth.
- Gently mix in the applesauce into the wet ingredients.
- Gradually add dry mixture to wet ingredients alternately with buttermilk.
- Preheat your oven to 350°F (180°C), line muffin tin with cupcake liners, and fill each liner about ¾ full.
- Bake for approximately 20 minutes or until a toothpick comes out clean.
- Cook diced apples with brown sugar and cinnamon until tender, then set aside.
- Whip mascarpone cheese and heavy cream until stiff peaks form and mix in powdered sugar.
- Once the cupcakes are cooled, cut out a cone shape from the center, fill with apple filling, and top with frosting.
