Step-by-Step Instructions
  1. In a medium saucepan over medium heat, combine fresh blackberries, water, lemon juice, and sugar. Cook for 20-30 minutes until it thickens and cool to room temperature.
  2. Let the puff pastry sit at room temperature for 20-25 minutes. Roll out into a rectangle on a floured surface.
  3. Spread goat cheese on half of the puff pastry, spoon on blackberry jam, cut into 12 strips, fold, and twist.
  4. Preheat oven to 400°F. Place twists on a lined baking sheet, brush with egg wash, sprinkle with sugar and thyme. Bake for 16-18 minutes.
  5. Cool on a wire rack for 5-10 minutes before serving.
