Ingredients
  

For the Chicken Marinade
  • 1 pound Chicken Thighs Juicy and full of flavor
  • 3 cloves Garlic Minced
  • 1 cup Greek Yogurt Plain yogurt can substitute but won't be as thick
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 3 tablespoons Olive Oil Extra virgin recommended
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Turmeric
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Yogurt Sauce
  • 1 cup Greek Yogurt
  • 1 clove Garlic Minced
  • 2 tablespoons Lemon Juice
  • 1/2 cup Cucumber Diced
  • 1 tablespoon Fresh Herbs (Parsley, Mint) Chopped
  • 1 teaspoon Salt
For Serving
  • 4 pieces Pita Bread or Flatbread Try lettuce wraps for a lighter option

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a medium-sized bowl, combine the Greek yogurt, olive oil, minced garlic, freshly squeezed lemon juice, cumin, paprika, turmeric, cinnamon, salt, and pepper. Whisk until smooth.
  3. Add the chicken thighs to the marinade, coating well. Cover and let marinate for at least 30 minutes.
  4. Line a baking sheet with foil or parchment paper and lightly grease with olive oil.
  5. Remove marinated chicken and arrange in a single layer on the prepared baking sheet.
  6. Roast the chicken for 25-30 minutes, turning halfway, until golden brown and cooked through.
  7. Prepare the yogurt sauce by mixing Greek yogurt, minced garlic, lemon juice, diced cucumber, salt, and fresh herbs until smooth.
  8. Let the chicken rest for a few minutes, slice, and serve in pita bread with yogurt sauce.
