Ingredients

For the Base
  • 1 cup Cottage Cheese Consider low-fat for a lighter option
  • 5 oz Tuna Canned, drained and flaked
  • 1/2 cup Breadcrumbs Preferably whole wheat; can substitute with gluten-free
  • 1 large Egg Acts as a binder; use a flax egg for egg-free
For the Flavor
  • 1/4 cup Green Onions Finely chopped
  • 1/4 cup Red Bell Pepper Diced
  • 1 tbsp Worcestershire Sauce Optional for a lighter version
  • 1 tbsp Dijon Mustard Can swap with yellow mustard
  • 1 tsp Garlic Powder Fresh garlic makes a great alternative
  • 1 tsp Onion Powder Can use fresh onion, but may add moisture
  • Salt To taste
  • Pepper To taste
For Cooking
  • 2 tbsp Olive Oil For frying; avocado oil is a good substitute
  • Fresh Parsley For garnish, optional

Equipment

  • Mixing bowl
  • skillet
  • Spatula
  • Paper towels

Method

Step-by-Step Instructions
  1. In a large mixing bowl, add the cottage cheese and drained, flaked tuna, stirring until they are thoroughly combined.
  2. Next, add the breadcrumbs, finely chopped green onions, diced red bell pepper, egg, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, salt, and pepper into the bowl. Stir gently until the mixture becomes a cohesive batter.
  3. Let the mixture sit for about 10 minutes at room temperature.
  4. While the mixture rests, place a skillet over medium heat and add the olive oil. Allow the oil to heat for about 2 minutes.
  5. Using your hands, scoop out portions of the mixture and shape them into patties that are about 2-3 inches wide and ½ inch thick.
  6. Carefully place the formed patties into the hot skillet, frying them for about 4-5 minutes on each side.
  7. Once cooked to a golden brown, remove the cakes from the skillet and place them on paper towels to drain off any excess oil.
  8. Serve the cakes warm, optionally garnished with freshly chopped parsley.
