  • 2 pieces Chicken Breasts Lean protein
  • 1 tablespoon Olive Oil For grilling

  • 1 teaspoon Paprika Optional
For the Broccoli
  • 4 cups Broccoli Florets Fresh
For the Grain
  • 2 cups Brown Rice Or Quinoa
For the Creamy Sauce
  • 1 cup Greek Yogurt Creamy base
  • 1/2 cup Light Mayonnaise
  • 2 cloves Garlic Minced
  • 2 tablespoons Lemon Juice Fresh
  • 2 tablespoons Water Adjust consistency
  • to taste Salt
  • to taste Pepper

Method
 

Grilling and Preparation
  1. Preheat your grill to medium-high heat, around 375°F (190°C). Season chicken with salt, pepper, and paprika. Grill chicken for 6-7 minutes per side until it reaches 165°F (74°C). Let rest.
  2. Fill a pot with water and insert a steamer basket. Bring water to boil. Steam broccoli for 4-5 minutes until bright green and tender.
  3. In a bowl, mix Greek yogurt, mayonnaise, garlic, lemon juice, and adjust with water. Season with salt and pepper.
  4. Assemble bowls with cooked rice, chicken, and broccoli. Drizzle sauce over the top.
