Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, pour in a tablespoon of olive oil and warm it. Add the lean ground turkey, seasoning with salt, pepper, paprika, and dried thyme. Cook for about 5-7 minutes until browned.
  3. Add diced onion and bell pepper to the skillet with the turkey. Cook for roughly 5 minutes until softened.
  4. Stir in fresh spinach or kale, cooking for an additional 2-3 minutes until wilted.
  5. Mix the turkey and vegetable mixture with cubed sweet potatoes in a bowl.
  6. Transfer the mixture into a greased baking dish, spreading it evenly. Top with shredded cheddar and mozzarella cheese.
  7. Bake in the preheated oven for 25-30 minutes until cheese is bubbly and golden brown.
  8. Remove from the oven and let it sit for about 5 minutes before serving.
