  • 1 pound Skinless Salmon Filets Cut into cubes
  • 2 tablespoons Avocado Oil Can substitute with olive oil
  • 2 tablespoons Honey Can substitute with maple syrup for vegan
  • 2 tablespoons Soy Sauce or Tamari Use Tamari for gluten-free
  • 1 teaspoon Sriracha Adjust to taste
For the Base
  • 2 cups Cooked Brown Rice Can substitute with quinoa
For the Toppings
  • 1 medium Avocado Fresh and ripe
  • 1 cup Diced Cucumber
  • 1/4 cup Finely Chopped Cilantro Or parsley
For the Sauce
  • 1/2 cup Light Mayo Or vegan mayo
  • 2 tablespoons Fresh Lime Juice Fresh juice preferred
  • 1 teaspoon Paprika Smoked or regular
  • 1 teaspoon Cumin

Method
 

Main Instructions
  1. Preheat your oven to 425°F (220°C). Prepare the salmon and other ingredients while the oven heats.
  2. In a medium bowl, combine cubed salmon with avocado oil, honey, soy sauce, and sriracha. Toss gently.
  3. Spread marinated salmon on a parchment-lined baking sheet and roast for 10 minutes.
  4. Switch oven to broil and broil salmon for an additional 2-3 minutes until crispy.
  5. While salmon is cooking, whisk together light mayo, paprika, and lime juice for the sauce.
  6. In another bowl, combine diced avocado, cucumber, cilantro, lime juice, and honey for the salad. Toss gently.
  7. To serve, layer cooked brown rice, crispy salmon, avocado-cucumber mixture, and drizzle sauce on top.
