- Cover the mixing bowl tightly and refrigerate for about 30 minutes to firm up the mixture.
- Scoop out portions of the dough and roll them into balls, each about 1 inch in diameter, creating a total of around 20-24 balls.
- In a small bowl, combine the zest of 1 lime and ¼ cup of granulated sugar, mixing well to distribute the zest.
- Roll each chilled ball in the lime zest and sugar mixture until completely coated.
