  • 1 teaspoon Garlic Powder or substitute with fresh minced garlic
  • 1 teaspoon Chili Powder adjust to taste for heat level

  • 1 tablespoon Olive Oil can substitute with avocado oil
  • 1 medium Onion yellow or white
  • 1 can Ro-tel Diced Tomatoes & Green Chiles
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn can use frozen corn
  • 1 teaspoon Smoked Paprika can use regular paprika
  • 1 cup Mexican Cheese Blend or Cheddar/Monterey Jack
  • to taste Fresh Cilantro optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) with the rack positioned in the middle.
  2. Slice the chicken breasts lengthwise into thinner cutlets and season with garlic powder, chili powder, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat and cook the chicken for 3-4 minutes per side.
  4. Add chopped onion to the same skillet and sauté for about 5 minutes until softened.
  5. Stir in the drained tomatoes, black beans, corn, and smoked paprika; mix well and heat through for 2-3 minutes.
  6. Return the chicken to the skillet, pour some tomato mixture over the chicken, and sprinkle with cheese.
  7. Place the skillet in the oven and bake for 5-7 minutes until chicken reaches 165°F and cheese is bubbly.
  8. Garnish with fresh cilantro and serve warm.
