Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Grease an 8x8-inch baking dish.
  2. In a large bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Press the mixture into the bottom of the baking dish.
  3. Flake the skinless salmon fillet and mix with mayonnaise, Sriracha, soy sauce, and sesame oil until smooth.
  4. Spread the salmon mixture evenly over the rice layer and sprinkle shredded mozzarella cheese on top.
  5. Bake in the preheated oven for 18-20 minutes until the cheese is melting and bubbly.
  6. Remove from oven, let cool slightly, and garnish with chopped green onions and toasted sesame seeds.
  7. Serve warm with roasted seaweed (nori) for scooping.
