Ingredients
  

For the Chicken
  • 1 lb Boneless chicken breast cut into strips
  • 3 tbsp Soy sauce or tamari for gluten-free
  • 1 tbsp Sesame oil can substitute with olive oil
For the Sauce
  • 1/2 cup Creamy peanut butter or almond/sunflower seed butter
  • 2 tbsp Lime juice
  • 2 cloves Garlic minced or garlic powder
  • 1 tbsp Fresh ginger grated or ground ginger
  • 1 tbsp Honey or agave syrup for vegan option
For the Wraps
  • 4 large Flour tortillas or whole wheat/large lettuce leaves
  • 4 leaves Fresh lettuce leaves such as iceberg or romaine
  • 1 cup Purple cabbage shredded
  • 1 cup Carrots julienne
  • 1/4 cup Fresh cilantro optional garnish

Method
 

Prepare the Sauce and Chicken
  1. In a medium bowl, whisk together the creamy peanut butter, soy sauce, sesame oil, lime juice, minced garlic, grated fresh ginger, and honey until well combined.
  2. Cut the boneless chicken breast into thin strips. In a separate bowl, combine the remaining soy sauce and sesame oil, then coat the chicken strips and let them marinate for about 10 minutes.
Prepare the Vegetables and Cook the Chicken
  1. Wash and dry the fresh vegetables. Slice the lettuce leaves, purple cabbage, and carrots into manageable pieces.
  2. Heat a non-stick skillet over medium-high heat. Cook the marinated chicken strips for about 6 to 8 minutes until golden brown and cooked through. Remove from heat.
Assemble and Serve
  1. Warm the flour tortillas in a microwave or on a skillet for about 30 seconds.
  2. Spread a layer of peanut sauce on each tortilla, add crunchy vegetables and chicken strips, and roll tightly. Cut in half and serve immediately with extra sauce.
