Gradually stir in 1 1/2 cups of shredded cheddar cheese until melted and glossy. Keep the sauce warm on low heat while you move on to cooking the beef.
  2. In a large skillet over medium-high heat, brown 1 pound of ground beef, breaking it into small pieces with a wooden spoon. Cook until fully browned, about 5-7 minutes. Drain excess fat, then sprinkle in 2 tablespoons of taco seasoning and stir well. Add a splash of water if needed, allowing the mixture to simmer for 2-3 minutes to blend the flavors.
  3. Heat a tablespoon of olive oil in a separate skillet over medium heat. Carefully place a low-carb tortilla in the hot oil and fry for 1-2 minutes until golden and crispy. Flip the tortilla and fry for an additional 1-2 minutes. Once done, transfer it to a paper towel-lined plate to drain and repeat with the remaining tortillas.
