  • 4 cups Cooked White Rice Preferably leftover rice
  • 2 tablespoons Vegetable Oil Canola or sesame oil
For the Veggies
  • 1 cup Carrots Diced small
  • 1 cup Green Peas Frozen, no need to thaw
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
For the Protein
  • 2 large Eggs Beaten
For the Flavor
  • 2 tablespoons Soy Sauce Low-sodium recommended
  • 2 tablespoons Green Onions Chopped for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  2. In a medium bowl, crack and beat the eggs until well combined.
  3. In a non-stick skillet, sauté chopped onions and minced garlic over medium heat for about 3-4 minutes.
  4. Add diced carrots and frozen peas to the sautéed mixture and cook for an additional 5 minutes.
  5. Stir in the cold cooked rice along with the soy sauce, mixing thoroughly for about 3-4 minutes.
  6. Create a small space in the center of the rice mixture and pour in the beaten eggs, stirring gently until scrambled.
  7. Mix everything together until well combined and heated thoroughly, about 2 minutes.
  8. Remove from the fryer, transfer to a serving bowl, and garnish with chopped green onions.
