  • 1 cup Sour Cream Can substitute with Greek yogurt
  • ½ cup Mayonnaise Mexican crema is an alternative
  • 8 oz Cream Cheese Ensure softened
For the Cheesy Goodness
  • 1 cup Shredded Cheddar Cheese Swap with any cheese
  • ½ cup Pepper Jack Cheese Use mozzarella for milder flavor
For the Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika Regular paprika works too
  • 1 teaspoon Chili Powder Adjust for desired spice
  • to taste Salt & Black Pepper
For the Color and Crunch
  • ¼ cup Chopped Green Onions Substitute with chives if preferred
  • ¼ cup Diced Red Bell Pepper
  • 1 piece Jalapeño Omit for milder version
  • Cilantro (optional) Skip if not liked

Method
 

Preparation Steps
  1. Prepare fresh corn by cutting kernels off the cob or drain and rinse canned corn. Set aside.
  2. In a bowl, combine sour cream, mayonnaise, and softened cream cheese until smooth.
  3. Fold in cheddar and pepper jack cheeses, then add garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Mix well.
  4. Gently fold in corn, green onions, diced red bell pepper, and jalapeño.
  5. Cover and refrigerate for at least 30 minutes or preheat oven to 375°F.
  6. Transfer mixture to a greased baking dish, bake for 20-25 minutes until golden and bubbly.
  7. Garnish with chopped green onions, serve with tortilla chips or veggies.
