Preheat your oven to 350°F (175°C).
In a small bowl, mix together the garlic powder, onion powder, paprika, salt, and black pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown. Remove from heat.
In the same skillet, add the sliced mushrooms and sauté for about 3-4 minutes until tender.
Place the browned chicken breasts in a baking dish. Drizzle the honey mustard dressing over each piece of chicken.
Top each chicken breast with sautéed mushrooms, chopped bacon, and shredded Monterey Jack cheese.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Garnish with chopped parsley before serving.
