Preparation Steps
  1. Rinse sushi rice under cold water until water runs clear. Place in a rice cooker with water or a saucepan on stovetop to boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
  2. Transfer cooked sushi rice to a large bowl. While warm, mix in rice vinegar, sugar, and salt. Gently fold with a wooden spatula to cool.
  3. Slice cucumber into matchsticks and dice avocado into bite-sized pieces. Set aside.
  4. Layer seasoned sushi rice in serving bowls, top with cucumber, avocado, and crab.
  5. Mix soy sauce and sriracha in a small bowl. Drizzle over the assembled bowls.
  6. Serve immediately for best taste.
