- Prepare Taco Filling: Cook the ground beef, turkey, or chicken in a skillet until browned. Add taco seasoning and optional veggies, then cook for another minute. Remove from heat and cool slightly.
- Cut Ghost Shapes: Roll out pie crusts on a floured surface to 1/8 inch thick. Use ghost cookie cutters to cut shapes and lay out on a lined baking sheet.
- Fill Ghosts: Spoon taco filling onto half of the ghost cut-outs and sprinkle shredded cheese on top.
- Seal the Hand Pies: Place a second ghost cut-out on top and press edges to seal, using a fork to crimp.
