Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 packet ranch seasoning mix 1 ounce
  • 8 ounces cream cheese softened
  • 1 cup shredded pepper jack cheese
  • 1 cup chicken broth
  • 1/2 cup cooked bacon crumbled
  • 1/4 cup green onions chopped
  • Salt and pepper to taste

Method
 

  1. In a slow cooker, place the chicken breasts and sprinkle the ranch seasoning mix evenly over the top.
  2. Add the softened cream cheese and chicken broth to the slow cooker, ensuring the chicken is mostly submerged.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.
  4. Once cooked, shred the chicken directly in the slow cooker using two forks. Stir in the shredded pepper jack cheese and crumbled bacon until well combined.
  5. Taste and season with salt and pepper as needed.
  6. Serve warm, garnished with chopped green onions.
